Laurie Nicholls has spent his life surrounded by good food and good wine. When he’s not passing on his wealth of knowledge to his students in Commercial Cookery at TAFE (Port Macquarie), we’re lucky to have him on board with us. Laurie enjoys keeping his skills current by getting out of the classroom and into our kitchen. Having worked as an executive chef in five star establishments, Laurie initially trained in classic french cooking, but can turn his hand to pretty much anything.
